Umbel Oyster Mushroom (Pleurotus eryngii, var. ferulae)

:

Cap with a diameter of 3-10 cm of white colour while young, later it becomes brown. It has white flesh, with pleasant taste and smell. It grows at the roots of plants or near decayed plants of the family of Umbellliferae. In Cyprus we find it at the roots of Umbel Oyster plant, mainly at riverbeds, from autumn until spring. It is edible and tastes very well.

Delicious Milky Cap/Saffron Milk Cup (Lactarius Deliciosus)

:

Cap with a diameter of 3-10 cm, orange to red or orange to grey in colour, with concentric circles of darker to greenish colour, slightly clammy, and sticky when the weather is damp. White flesh that later changes its colour to orange or green when it is cut. It has a pleasant smell. It abounds in forests of coniferous trees and particularly pine trees. It fruits in late autumn after satisfactory rainfall. It is considered one of the tastiest mushrooms.

Cauliflower Fungus/Brain Fungus (Sparassis crispa)

:

Fruit body with a diameter of 20-50 cm that looks like a cauliflower or a natural sponge. It has a light pale yellow to brownish colour that becomes brown when it matures. It has a rather hard and elastic flesh with a sweet smell and mild pleasant taste. It fruits in isolation on the ground at the base or near coniferous trees and particularly pines during autumn. It is edible at its prime stages but must be washed well.

Morel (Morchella elata)  

Morel (Morchella elata)

:

Cap up to 10cm high, conical. Its surface has evenly arranged yellow-brown concavities that form honeycomb cells. The stalls are f grey colour. It fruits in late spring, in forests of coniferous trees, meadows, and gardens. It is edible but rough.
